Anyone else trying to eat clean with your kids? Lord help me, it's tough!! Found this one and even the boys will eat them. 1 point for mom!
Ingredients
1.5 cups quick-cook Oats
1 cup oat flour
3/4 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp baking soda
1/4 tsp salt
2 medium ripe bananas, smashed
2 large eggs
1/4 cup melted coconut oil
3/4 cup chopped dates or raisins or craisins
1/3 cup shredded unsweetened coconut flakes
1 tsp vanilla
1. Preheat oven to 350 degrees F and line large baking sheet with parchment paper
2. Combine oats, flour, cinnamon, nutmeg, baking soda and salt in a large bowl.
3. Add eggs, coconut oil and vanilla and whisk until well mixed.
4. Add smashed bananas, dates/raisins/craisins and coconut flakes and combine.
5. Scoop tablespoon size dough ball and place on baking sheet. Press with a fork to flatten just slightly.
6. Bake until firm to the touch and light brown on the bottom, 15-17 mins.
7. Remove from cookie sheet and cool on a wire rack.
